Roasted Vegetables

When your serving a big crowd, this is a great dish.  My Mom started making this for all the family events that seemed to keep happening.  It is a delicious side dish.

Your choice of vegetables
Some suggestions:
Red potatoes
Green. red. orange, or yellow bell peppers
Onions
Zucchini
Squash
Cauliflower
Broccoli
Carrots

Coat tray with cooking spray, put vegetables on tray and drizzle olive oil on top.  Sprinkle with your choice of seasonings (sea salt, pepper, italian seasoning, rosemary, marjoram).
Bake at 375 for 1 hour or at 350 for 1 1/2 hours.
