Hope Pudding

In college my roommate from Canada, Laurie Bates shared this recipe with us. It has basic ingredients and tastes like you are in a log cabin somewhere in the woods--it will warm you to the toes! This works best in a cast iron skillet that can be placed in the oven.

1 Tablsp. butter
1/2 cup sugar
1/2 cup milk
1 teasp. vanilla
1/2 cup raisins
1 cup flour
3/4 teasp. baking soda
1 teasp. baking powder
1/2 teasp. nutmeg
1 cup brown sugar
1 cup hot water
2 Tablsp. butter

Cream butter and sugar. Add milk and raisins. Mix dry ingredients and add to wet. Pour in ungreased cast iron frying pan. Sprinkle 1 cup brown sugar over top and then hot water and 2 Tblsp butter.
Bake 20 minutes at 350 degrees
Top with whipped cream or ice cream.
