Texas Caviar

We love making this for summer family gatherings.  It is definitely addicting!

2 cans black-eyed peas, rinsed and drained
1 can shoepeg corn, drained
1 can black olives, coarsely chopped
1 large green pepper, diced
1 bunch scallions, chopped
6-7 roma tomatoes, chopped
1 block feta cheese, crumbled
1 bottle Italian dressing

 Mix well in large bowl. Refrigerate overnight. Serve with Frito Scoops.

  1. We love to add chicken, a red pepper and use mozzarella cheese and eat it with lettuce as a main course salad!
