Granola Mix

This is a soft, chewy granola. Even though it has plenty of calories, it has plenty of good stuff too and is the perfect thing for a filling breakfast.  Plus it makes your house smell like heaven while baking!


10 c. old-fashioned rolled oats (or seven grain oats mixture)
1 c. wheat germ
1/2 lb. shredded coconut
2 c. raw sunflower seeds
1 c. sesame seeds
3 c. chopped almonds, pecans, walnuts or combination
1-1/2 c. brown sugar, firmly packed.
1-1/2 c. water
3/4 c. vegetable oil
1/2 c. honey
1/2 c. molasses
1-1/2 tsp. salt
2 tsp. cinnamon
3 tsp. vanilla
Raisins, or other dried fruits, if desired for topping

Preheat oven to 300 F. In a large bowl combine oats, wheat germ, coconut, sunflower seeds, sesame seeds and nuts. In a large saucepan, combine brown sugar, sugar, water, oil, honey, molasses, salt, and cinnamon. Heat on medium heat until the sugar dissolves. Add vanilla and cook a little longer. Do not boil. Pour wet mixture over dry ingredients and stir until well-coated. Spread into a couple of cookie sheets with sides or 9x13 pans. Bake 20 to 30 minutes, stirring every ten minutes. Bake 15 minutes longer if you want a crunchy texture. Cool and add any dried fruit you want. Store in airtight containers. If stored in a cool, dry place it can last for 6 months.
