Lemon Ice Cream

My mom found this recipe in the newspaper and it is delicious!  It feels light and creamy with just a touch of lemon.  I love it!  The original recipe is a large batch for a traditional ice cream maker.  I put the measurements for my small ice cream maker (one of those where you freeze the insert) next to it in case anyone else wants them.

4 cups sugar  [1 1/3 cups for smaller machine]
3/4 cup fresh lemon juice  [1/4 cup or just a tad more]
1 1/2 t. lemon extract  [1/2 t.]
2 quarts (8 c.) milk (whole milk is best, of course)  [2 2/3 cups]
1 pint (2 c.) cream  [2/3 cup]

Dissolve sugar in juice, extract and milk.  Add cream last.  Freeze in ice cream freezer according to directions.  Enjoy!
